Zucchini Apple Bread

The flavors of a fall harvest and cinnamon are welcoming and comforting, perfect for someone whose spirits may need a lift.  And while the flavor says autumn, the ingredients are available year-round – so enjoy!

Preheat oven to 325°F. Spray 9x5 in. loaf pan with vegetable pan spray; set aside.

In large bowl, combine flour, sugar, cinnamon, baking powder, salt and nutmeg. In medium bowl, whisk together oil, eggs and vanilla extract. Stir into flour mixture. Stir in zucchini, apple and pecans, mixing until just combined. (Do not overmix.) Turn mixture into prepared pan.

Bake 60-70 minutes or until toothpick inserted in center comes out clean.  Cool bread in pan 10 minutes. Remove bread from pan; cool completely on cooling grid.

Makes about 12 servings.

Cook’s Tip: If desired, substitute chopped walnuts or other favorites for pecans.

Gift Giving Tips: Baked gifts are perfectly paired with gifts that will get continuous use, such as a Loaf Pan. Cool bread according to recipe instructions, then return to cleaned pan.  Slip the bread along with pan into a Large Treat Bag; secure the bag with a twist tie and a beautiful ribbon. Trim away any excess from the top of the bag.

If desired, include additional kitchen utensils that complement the theme of the gift, such as placing the wrapped pan on a wooden cutting board. Secure the bottom of the bag to the board using double stick tape, then tie both with another ribbon. Attach a recipe card for future baking occasions.
