Touchdown Chili Pie

Baking pans aren´t just for cakes. This tasty chili pie enclosed in cornbread will be the hit of any tailgate party. It's the perfect centerpiece of your Super Bowl party, a pre-game dinner for the team or maybe an alumni gathering to watch the big bowl game! Make it as spicy or mild as you like by varying the amount of chili powder and the type of salsa you use.

Preheat oven to 400°F.

In large skillet, brown ground beef; drain fat. Season with chili powder, salt and pepper; heat through. Add salsa, corn and black olives; heat through for 5 minutes. Remove skillet from heat. Fold in cheese. Keep filling hot.

Prepare one cornbread mix according to package directions. Spray pan with vegetable pan spray. Spread batter evenly on bottom and up the sides of pan. Spoon in meat filling; spread evenly. Prepare second cornbread mix according to package directions. Spread batter evenly over top of meat mixture. Place pan on large cookie sheet. Bake 25-30 minutes or until top crust is golden brown. Remove pan from oven; cool 10 minutes. Remove from pan to serving plate. Serve immediately with sour cream and green onion, if desired.

Serves 8-10.
