Mini Lemon Pound Cake

The perfect cake for a serving of one. A hint of lemon adds a refreshing twist everyone will love.

Preheat oven to 350°F. Grease and flour pan or spray with vegetable pan spray with flour.

In medium bowl, beat butter, sugar and lemon zest with electric mixer at medium speed until light and fluffy. Add one egg; mix well. Add flour and salt; blend until just combined. Add second egg; mix well. Add milk and vanilla; blend well. Spoon batter into prepared pan.

Bake 35-40 minutes or until toothpick inserted in center comes out clean. Remove from oven.

NOTE: Recipe can be doubled and tripled.

Makes about 1 cup batter.
