These coffee flavored cookies are choc-full of chocolate chips. They're the perfect choice for any coffee lover, but others will love them too!
Preheat oven to 350°F.
In small bowl, dissolve coffee granules in vanilla extract; set aside. In medium bowl, combine flour, baking soda, cinnamon and salt. In large bowl, cream butter and sugars with electric mixer until light and fluffy. Add eggs and coffee mixture; mix well. Add flour mixture to butter mixture, mixing until just combined. Stir in 2 cups chocolate chips. Drop rounded tablespoons of cookie mixture onto ungreased cookie sheet, spacing about 2 inches apart.
Bake 12-14 minutes or until cookies are lightly browned. Cool cookies on cookie sheet 3 minutes. Transfer cookies to cooling grid; cool completely.
Melt remaining 1 cup chocolate chips following package instructions. Drizzle cooled cookies with melted chocolate. Store cookies in airtight container at room temperature for up to 1 week.
Makes about 36 cookies.
