Coconut Layer Cake

Preheat oven to 350°F. Lightly spray two 8 in. round cake pans with vegetable pan spray; set aside.

In large bowl, prepare cake mix according to package directions using electric mixer plus ingredients to make cake. Stir in coconut extract. Gently fold in coconut. Divide cake mixture evenly between prepared pans.

Bake 30-32 minutes or until cake tester inserted in center comes out clean. Place pans on cooling rack; cool 8-10 minutes. Remove cakes from pan; cool completely.

Makes about 5-1/2 cups batter.
