Lady Liberty!

From the multi-colored cake inside, to the brightly-hued stars around the sides, all topped with Miss Liberty, this cake is all about red, white and blue. Decorated cut-out cookies make decorating this cake a breeze.

Cake serves 24. Cookie Topper serves 1.

Step 1

Step 1: Bake Cookies In Advance

Prepare statue cookie by tracing pattern on parchment paper. Roll out cookie dough ΒΌ-in. thick; cut Statue of Liberty cookie using pattern, 1 cookie from largest star cutter from set and several small and medium cookies using cutters from set. Poke hole in center of large star cookie with cookie stick. Bake and cool cookies; repoke hole in large star if necessary. Cover largest star with white royal icing. Ice smaller stars using red and blue Sparkle Gel.

Step 2: Decorate Cookie Cake Topper

Using teal royal icing, outline statue using tip 3. Fill in outline with thinned teal royal icing. Add icing details using medium consistency royal icing and tip 3. Set aside to dry. Attach cookie stick to back of cookie with royal icing; set aside until firm.

Step 3

Step 3: Make The Cake

Prepare white cake batter; divide into thirds. Reserve one portion white and tint remaining portions red and blue, stirring gently. Spray two baking pans with vegetable pan spray. Scoop or spoon the three different colored batters into the pans randomly. Bake 30-35 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan and cool completely. Stack and position on foil-wrapped cake board.

Step 4: Decorate the Cake

Spatula ice cake with white buttercream icing. Tint piping gel with blue icing color; carefully spread over top of cake with spatula. Add white buttercream tip 16 star top border and tip 22 star bottom border. Attach cookies to side of cake. Place large star cookie onto cake top; insert cookie on stick through hole in star cookie into cake.
