Cut-out fondant flowers in brilliant colors set on a backdrop of a white iced cake. The spoon-icing technique makes the cake look like a cloud. Even novice decorators can easily decorate this cannoli-flavored cake, which tastes as good as it looks!
Serves 12-16.
Several days in advance, make fondant flowers and leaves. Roll out neon pink, purple and orange fondant 1/16 to 1/8 in. thick. Using medium Flower Cut-Out, cut flowers. Shape on thick foam using ball tool; place in flower formers dusted with cornstarch to dry. Roll small balls of yellow fondant; attach to flowers with damp brush.
Tint white fondant leaf green; roll out 1/8 in. thick and cut leaves using varied sizes of Leaf Cut-Outs. Place on thin foam. Using veining tool, mark vein lines. Dry completely; if desired, dry in flower formers dusted with cornstarch.
Prepare Cannoli Cake following recipe instructions. Cool layers completely. Assemble layers with recipe filling on foil-wrapped cake circle. Prepare Whipped Icing Mix following package instructions; ice cake.
Position flowers on top of cake; fill in with fondant leaves. Arrange additional flowers and leaves along bottom border.
