Gingery Upside Down Cake

The idea of cooking a cake upside down is a baking technique started centuries ago when cakes were cooked in cast iron skillets. The pineapple version was invented soon after 1911 when sliced pineapple in cans became available in grocery stores. We’ve updated the look and the flavor – adding two types of ginger, then baking the cake in a butterfly shaped pan.
