I would like to use fresh banana for a cake filling. Any suggestions on how to stop the banana from turning black in color?

Adding an acid like lemon or lime juice to the filling will help, as will products like Fruit-Fresh™, a powder which will keep fruit from browning for up to 8 hours. That’s about as long as you can expect the banana to stay looking fresh.
