What is the best way to thaw a cake that has been frozen so that condensation does not form on the icing? How do you calculate the amount of time needed to thaw a cake?

Leave the air-tight wrapping that you placed around the cake before freezing on the cake while defrosting – that way the condensation builds up on the wrapping, not the icing decorations. When the weather is extremely hot and humid, many decorators will first move the cake from the freezer to the refrigerator, again keeping the cake wrapped; once thawed, they then move it to a counter and allow the cake to come to room temperature. The time it takes to thaw a cake depends on the size of the layers, the density of the cake, and numerous other factors. I would plan a minimum of 24 hours.
