Nancy, I was wondering, when making a fondant-covered cake, do you cool the cake, crumb coat it then cool it, or what?

You should always cool a cake before adding either buttercream icing or fondant. When making a fondant-covered cake, cool the layers, stack your cake layers, then crumb coat or lightly ice the cake with buttercream icing. Then you can add your rolled fondant!
