Cakes can be stored 2-3 months in the freezer, however, the taste of frozen cakes can be affected by storage after just 1-2 weeks. If a cake is not wrapped tightly in several layers of plastic wrap or freezer paper, air is allowed to exchange. This can cause the cake to dry out or absorb odors from other foods in the freezer. Fondant will soften from the freezing process and we don't recommend freezing cakes covered in fondant.
