Can vanilla rum replace vanilla extract?

Unfortunately, no. The vanilla flavor of vanilla extract is highly concentrated. If you were to use vanilla rum, you would need to use a large amount of it to get the same vanilla flavor. The extra liquid would ruin your baking project and if used in icing, would produce an icing that is much too thin.
