every time I make a chocoate cake from scratch, it flows over the pan...a lot. Why does this happen when I put equal amounts in each pan?

What size cake pans are you using? No matter what size or shape, make sure that you are filling your cake pans no more than 2/3 full with batter. 2/3 is the magic number for getting the cake to rise just the right amount.
