How do you make apricot glaze? And, how can I keep the fruit looking fresh on the top of my cake?

The simplest apricot glaze is apricot preserves. Melt the preserves in the microwave oven or on the stove, then strain out the fruit pieces and use according to recipe instructions. To keep fruit looking fresh on top of a cake, start with good quality fruit that has no blemishes or soft spots. Then, wait as long as possible to place them on the cake.
