I love your show! It has gotten my 11-year-old daughter interested in baking and cake decorating. Our question: Is it necessary to sift powdered sugar when making buttercream icing? What difference does sifting make in the icing?

Sifting the powdered (or confectioners') sugar prevents lumps in your icing. A freshly opened bag or box of sugar usually doesn't require sifting, but unless you store it in an airtight container, it's best to sift sugar that has been opened.
