Start by taking a long spatula. Smooth it across the icing on the cake top as best you can. Next, dip your spatula in hot water, wipe it dry and then go over your icing to smooth further. Another method is to ice your cake, then wait for the icing to slightly crust. Lay a piece of parchment paper over the icing, and run your hands or the spatula over the paper. This will help smooth any unwanted lines; the icing won’t stick to the paper because of the coating on the paper and the icing is dry.
