I do a lot of wedding cakes, and I have noticed the cake mixes do not seem to make as much batter lately. Is there any way to increase the amount of batter I get from a cake mix?

You are right! In trying to keep down the cost of what you pay for a cake mix, manufacturers have been slowly reducing the amount of mix in a box! Depending on the manufacturer, cake mixes now make between 4-3/4 and 5-1/4 cups batter. Unfortunately, there is no way to increase the amount of batter you get from a mix – if your favorite cake mix is on the lower end, try one of the other brands of cake mix. Your only other option is to make more than one mix.
