How can I keep the sides of my pound cakes from getting too brown while the middle and top are continuing to bake?

Try using Wilton Bake Even Strips around the side of your pan. You soak them in water before attaching it to the pan. The extra layer of moisture around the outside of the pan slows down the baking of the sides of the cake and makes the top rise more evenly.
