The most common way to stack a two layer cake is to cut the crown from the "top" of the baked cake to level it. Place a small amount of icing on the cake board or plate to hold the cake in place, then set the cut side of the layer down on your cake board or plate. Spread your filling or icing on the layer. Then, cut the crown from the second cake layer and place the first layer, cut side down. When arranged this way, the smooth crumb from the sides of the pan make the perfect surface for icing the cake successfully.
