Is it ok to eat fondant icing?

Yes, fondant is edible, though many Americans don't care for its flavor. That's one of the reasons we suggest icing the cake in buttercream icing or covering with apricot glaze before covering with fondant. (The other reason is that it helps the fondant stick to the cake.)
