Yes, you can freeze spritz cookie dough, however, to keep your dough fresh for longer, wrap dough very tightly with several layers of plastic wrap. This will keep odors from absorbing into the dough as well as keep the dough from drying out.

Spritz cookies contain eggs (as do many cookie recipes) so defrosting them slowly is important. Take them out of the freezer and put them into the refrigerator 24 hours in advance. Store each batch separately so the freezing and defrosting time is shorter, also keeping your dough safe.
