How do you color spritz cookie dough? I'm most familiar with kneading the icing color into roll-out cookie dough, but won't kneading into the spritz dough make it too tough or too soft?

When coloring spritz cookie dough, I like to add the coloring to the butter and sugar mixture as it's creaming. Be sure to make the color much darker than you'd like – adding the remaining ingredients will lighten the dough.
