Can I use margarine for the Roll-Out Cookie Recipe?

Cookies made with good-quality margarine are the most like those made with butter in texture and appearance, though they don’t have quite as rich a flavor as those made with butter. Always use stick margarine and make sure it has 70% or more oil. Don’t use margarines labeled as “spreads,” as these have water added, which makes a tough, crumbly cookie.
