As with any baking pan, we recommend filling the pan 1/2 to 2/3 full. That means, for a 7-3/4 x 7-3/8-in. pan you would fill the pan with about 2-1/2 cups batter; 10-3/4 x 7-7/8-in. pan 5 cups batter; 13-1/2 x 9-3/4-in pan with 8 cups batter and 16-1/2 x 12-3/8-in. with 11 cups batter. All except the largest pan should be baked at 350°F, for 25 to 40 minutes, depending on the size. The 16-1/2 x 12-3/8-in. pan should be baked at 325°F for 40-45 minutes. You may want to check your oven temperature with an accurate oven thermometer. If it's running hot, the sides of your cake will bake too fast before the center bakes through. Also, when you bake more than one layer at a time, it can affect the amount of time it bakes, as well as how evenly it bakes.
