I recently took some baking classes, and the teacher said to use unbleached flour for cakes. Is this true of all cakes? What's the difference between unbleached all-purpose flour and regular all-purpose flour?

The main difference between bleached and unbleached flour is the color. Unbleached flour is off-white and bleached flour is pure white, but when used in a recipe few people can notice a difference. They can be used interchangeably in recipes.
