Can I use less egg in my recipes like a cheesecake, a cake or a cupcake?

Eggs are a critical ingredient in baking. They contain proteins that set or coagulate from the oven's heat and form the structure of the cake. They also add flavor and color to your baked good, and whole eggs contribute to the total fat in the recipe, which effects the tenderness of your cakes, muffins and breads. Eggs also assist with your cake rising properly.
