The fat and moisture that sour cream adds to baked goods make it a necessary ingredient in our banana cake recipe. If you don't want to use sour cream, full-fat (not low- or no-fat) plain or vanilla yogurts can be substituted, though the cake might be a little bit drier and more crumbly than the original recipe. In some recipes, you could also add 2-3 more tablespoons of the fat used in the recipe (i.e. butter or margarine) and milk as a substitute.
