Cake batter, as well as many other batters, should not be saved and used at a later date. The batter should actually be placed in the oven as soon as possible. The baking powder in the cake is used as a leavening agent it becomes activated when in contact with wet ingredients and heated. If you wait too long to put your cake in the oven, the baking powder will no longer work, the cake will not rise, air tunnels will form and you will get less than an acceptable product.
