Dear Nancy in the ganache i can change the whip cream for milk? Or just i have to use whip cream? What i can do?

Milk cannot be substituted for heavy cream in ganache recipes. Milk does not have a high enough fat ratio, and using milk instead can cause the chocolate to seize up rather than melt smoothly.
