Stiff consistency icing will hold a 3/4 in. peak on a spatula. To test if your icing is stiff, place 1 cup of icing in a 9 oz. cup that is about 2-3/4” around. Insert a straight spatula all the way in the center of the icing and jiggle the cup. If the icing is at a stiff consistency, the spatula will remain upright. If the spatula falls over when you jiggle the cup, then your icing is at a medium consistency.
